Since I ran my last 'Learn to Crochet' course, I have been asked repeatedly for the recipes to the cakes that I made for each class. I simply cannot take the credit for the cakes alone, they were lucky picks from all around the internet, and as much as you enjoyed eating them, I hope you enjoy making them even more!!

For the final cake, I simply baked a vanilla cake (my favourite is Green's Vanilla Cake - yes, a box mix - because truly, I have tried six different vanilla cake recipes and none can compare for simplicity and guaranteed results). I sliced the cake into two layers and sandwiched them together with cream and berries. I then dolloped cream on top of the cake, threw on some more berries, and voila. If you can't find fresh berries, and I couldn't at the time, use thawed, frozen berries. The berry juices run over the white cream and down the cake and it all looks so much more delightful!
